What tomato powder is

Tomato powder is ripe tomato that has been dried — ours naturally sun-dried — and milled to a fine, free-flowing powder. Nothing is added: no colour, no acidity regulator, no preservative. What you are buying is concentrated tomato with the water taken out, which is why the colour is deep and the taste is noticeably sweeter and more intense than fresh tomato at the same weight.

That concentration is the whole point. Fresh tomato brings flavour and a great deal of water, and in many dishes the water is the problem — it thins a gravy, softens a coating, or forces a long reduction you do not have time for. Tomato powder gives you the flavour and the colour without the liquid.

Cooking with it

The most useful thing tomato powder does in an Indian kitchen is rescue and reinforce. A gravy that has come out pale and thin takes a spoon of tomato powder and tightens up in a minute, without another twenty minutes of reduction.

Judging quality before you buy

Colour tells you most of it. Good tomato powder is a deep, slightly brick red. Bright orange-red usually means added colour. Dull brown means the tomato was over-dried or is simply old, and old tomato powder tastes flat and faintly stale.

Taste a pinch dry. It should be sweet first, then tangy — recognisably tomato. If the sourness arrives before the sweetness, the fruit was underripe or an acidity regulator has been added.

Storage
