What dehydrated white onion powder actually is
White onion powder is fresh white onion that has been washed, peeled, sliced and dried down to a low moisture content, then milled to a free-flowing powder. Nothing is added on the way through — no salt, no anti-caking agent, no colour. What changes is water, and with it weight, bulk and perishability. Roughly ten kilos of fresh onion end up as around one kilo of powder, which is why a small jar goes a very long way.
White onion is worth naming specifically. Red and pink onion shades dry to a duller, sharper-tasting powder and sit at a different price point. White onion dries sweeter and cleaner, holds a paler colour, and is the shade most food manufacturers specify when they don't want the onion to tint the finished product. If a supplier quotes you a single "onion powder" rate without asking which shade you want, they are quoting the cheap one.
Cooking with it
The honest pitch for onion powder in a home kitchen is that it removes the worst twenty minutes of Indian cooking — peeling, chopping and crying over onions, then waiting for them to brown. It does not replace a slow-cooked onion masala, and anyone who tells you it does has not cooked one. What it does replace is the onion you would otherwise chop for a marinade, a dry rub, a gravy base you are building in a hurry, or a dish where you want onion flavour without visible pieces.

Onion powder is one of the workhorses of processed food, and it is specified for consistency as much as flavour. A dehydrated powder delivers the same intensity in January and June, does not need cold storage, and does not introduce water into a formulation that has been balanced without it.

Judging quality before you buy
Colour is the first tell. Good white onion powder is pale cream, not grey and not brown. Grey suggests poor drying; brown suggests scorching or a red-onion blend sold as white. Second, smell it dry — it should be sweet and pungent immediately, not flat. Flat powder is old powder.
Then ask for the paperwork. The number that actually matters is on the Certificate of Analysis, not on the pack: moisture, microbiological safety and purity against an agreed specification. Storage
Onion powder is hygroscopic — it pulls water out of the air, and once it does it cakes and loses aroma. Keep it in an airtight container away from steam and direct sunlight. A jar kept beside the hob will clump within weeks; the same jar in a cupboard will not. Clumping is not spoilage, but it is a sign the container is not doing its job.
