What dehydrated garlic is
Dehydrated garlic is fresh garlic that has been peeled, sliced and dried to a low moisture content, then cut to a specified particle size. It is sold as powder, granules, minced and flakes — same raw material, different mesh, and the choice matters more than most buyers expect.
Powder disperses instantly and disappears into a sauce or a seasoning. Granules hold their shape through mixing and give a slight texture. Flakes stay visible and rehydrate into recognisable pieces of garlic. Choosing the wrong cut is the single most common reason a formulation tastes right on paper and wrong in production — a fine powder in a retorted sauce can turn muddy where granules would have held.
Cooking with it
Garlic powder is not a substitute for a fresh clove crushed into hot oil, and it does not pretend to be. It is a different ingredient with its own advantages: it never burns the way chopped garlic does, it distributes evenly through a dry mix, and it does not go bitter when it sits.

The practical trick is hydration. Bloom it in warm oil, butter or the dish's liquid for a minute rather than sprinkling it on at the end. Dry garlic powder on a finished plate tastes harsh; the same powder given a moment in fat tastes round.

Garlic is one of the most widely specified savoury ingredients in processed food, and dehydrated garlic is how manufacturers get it without the labour, the waste and the microbiological risk of handling fresh cloves.

Judging quality before you buy
Start with colour: good dehydrated garlic is creamy white to pale straw. A grey cast means poor drying. Distinct browning means heat damage, and heat-damaged garlic tastes acrid rather than pungent.
Then smell it. It should hit you immediately and cleanly. Garlic loses volatiles faster than most dried alliums, so a weak smell in the bag is a weak smell in the finished product, and no amount of extra dosing fixes it properly.
Finally, ask what is actually in the bag. Garlic powder is a common target for bulking with starch or salt, particularly at prices that look too good. Storage
Keep it airtight, cool and out of sunlight. Dehydrated garlic is hygroscopic and will cake if it can reach humidity, and caking costs you aroma as well as flow. Never store it directly above the hob, however convenient that is.

Dehydrated garlic needs a moment to hydrate, so bloom it in warm oil, butter or the dish's liquid for about a minute instead of sprinkling it on at the end.
- Does dehydrated garlic contain preservatives?
