Whisk the tomato powder into warm water until smooth and lump-free; set the slurry aside.
Heat oil in a pan, crackle the cumin seeds, then stir in the ginger-garlic paste for 20 seconds.
Pour in the tomato slurry along with turmeric and salt.
Simmer 2–3 minutes until it thickens and the oil separates — your gravy base is ready.
Add your vegetables, paneer or cooked dal and finish cooking as usual.
