Ingredients

  • 1.5 cups water
  • 1 cup milk
  • 2 tsp black tea leaves
  • 3/4 tsp DharthiSe Dehydrated Ginger Powder
  • 2–3 tsp sugar, to taste
  • 2 green cardamom pods, crushed (optional)

Method

  1. 1

    Bring the water to a boil with the ginger powder and crushed cardamom.

    Add the tea leaves and let it boil hard for a minute to draw out the colour.

    Pour in the milk and sugar and bring it back to a rolling boil.

  4. 4

    Lower the flame and let it bubble for 2–3 minutes until deep brown and aromatic.

    Strain into cups and serve piping hot.

Chef tip

Let the chai rise and fall on the boil two or three times — that is the dhaba secret to a thick, full-bodied cup.
